The 7500 and the 6100 are both supported by Mklinux, see

Don't be put off by rumours that mklinux is slower that linuxppc; it's
faster than macos on the net - (an intuitive judgment); 'nuff said.

The latest pre-R1 is equivalent to RH6.

Everythinglinux can burn the CD for you.

It's also possible to put Debian on a PowerPC. See
