I've tried it off my motherboard IDE with my non-boot drive, after
unmounting the device etc, and I successfully plugged in the new one but I
couldn't get it to mount.  Oh well, I thought, I'll have to restart OSX.

With your OS YMMV.

Anyway then I touched something wrong and the machine went catatonic (the
sound buffer went into a loop, everything froze).  All was well after a
reset.
